Recipes Wanted

Ever get fed up with the same old food, soup, biscuit, bread or cake that you eat week after week??

Remember something you take for granted might be a treat for someone else.  So don't be shy submit your ideas today. Here are two soups to get you started

 
Tomato Soup
2 Vegetable Stock Cubes
1 Pint of water
2 Tins of tomatoes
1 Onion
2 Carrots
Juice and zest of an orange
 
  1. Mix all together, cook over low heat till bubble.
  2. Liquidise to make a nice smooth soup.

 

Ginger and Carrot Soup with Lime
1 Tbsp sunflower oil
1 tbsp finely grated fresh ginger
1 garlic clove, crushed
2 small onions, sliced
900ml (1½ pints) vegetable stock
Juice of 1 lime
150ml (¼ pint) double cream
Salt and freshly ground pepper
Very thin slices of lime and lime juice to garnish
  1. Heat oil and cook the ginger, garlic and onion gently for 10 minutes in a covered saucepan, without colouring.
  2. Add the carrots and stock.
  3. Cover, bring to the boil and simmer for about 20 minutes until the vegetables are tender.
  4. Cool a little, then puree in a liquidiser.
  5. Stir in the lime juice little by little to taste, then add the  cream and taste for seasoning.
  6. This soup is delicious served hot or chilled.  Garnish with thin slices of lime and sprinkled lime juice on top

 

Fat Cat's Courgette & Bacon Risotto
 
1 tablespoon olive oil
2 shallots peeled & finely chopped
1 clove garlic finely chopped
4oz streaky bacon finely chopped
6oz courgettes thinly sliced
6oz Arborio rice
3/4 pt chicken stock
1/4 pt white wine
2 tablespoons double cream
2 tablespoons parsley finely chopped

  1. Heat oil in a heavy based saucepan,
  2. add shallots, garlic and bacon
  3. Saute for 4-5 mins.
  4. Add courgettes cook for 3-4 mins more.
  5. Add the rice and combine well with the other ingredients.
  6. Add the white wine and stock in small quantities, stirring to incorporate each addition with the rice, until it is plump with a bite.
  7. Stir in cream and parsley. 
  8. Light the candles, pour the remaining wine and throw out the kids! as this
    SERVES 2 !
